Tim said I could... It shouldn't keep it from freezing though. Great tip about refreezing ice cream!

Feeling brilliant thanks to our man Tim. The sherbet was fantastic. I used whole milk and white rum. My fussy dad had seconds. I also grilled some pineapple to go with it. I glazed it with a mix of butter, rum, brown sugar and a pinch of salt. And then I thought it might be amazing to grill a bunch of pineapple this was and then make the sherbet from that. And no problem with the freezing. I made it right before dinner and stuck it in the fridge for 2.5 hours and the texture was perfect. Funny though as my dad asked me the same question about the enzymes in the pineapple keeping it from freezing. Got me a little worried there for a second but in Tim I trust.
