So I was just preparing cioppino, and I have to crack the crab before it goes in the soup. And when I was cracking the crab, it wasn't nearly as neatly done as my fishmonger.
So I was wondering, what tools & technique does a fishmonger use to crack dungeness crab when you ask for it "cracked & cleaned"? Anybody know?
