I used beef shanks to make the broth for beef barley mushroom soup, and I ended up with more cooked beef than I need for the soup. Ideas for best uses? TIA.

My mom used to use it to make a sandwich spread with mayo and pickles in it. She'd just grind up the meat and pickles, then moisten with the mayo. Kind of like making ham spread, actually.

I mix it in pasta sauce for a quick ragu. Also makes good broiled cheesy open faced sandwiches.

My mom tosses it with onions, oil and vinegar and lots of s&p to make a meat salad. If it's just a little you could use it in quesidillas. That's what I do with small portions of leftover meat, cube/shred and throw in between pitas with cheese, etc. and grill.

My mother made that, too. I haven't had it in ages. I'll have to remember it next time we have a roast.
