Hi Kenji I have been reading your stuff... you are a bit mad but I love it. Thanks for bringing the possibility of nachos sauce to Switzerland. Love that stuff (and very few ingredients or rigging of equipment). I did add a bit of orange food coloring as it didn't look toxic enough. I was ready to bathe in it.

Oh my! I'm so seriously out of the loop; I didn't know about the serious eats blog, wish I'd known about it earlier. I have to say I've always loved Kenji's CI recipes. Just fantastic.
