Blanching almonds?

Post subject:  Blanching almonds?

Googling recommends pouring boiling water over, wait 30 seconds, drain, peels pop off. Is there anything more to this, or any tips from people who have done it?

That's pretty much the way I have done it. Almonds peel pretty easy - hazelnuts are a bitch.

My general method is to buy blanched almonds. Somehow I get stuck peeling hazelnuts every Xmas, though.

OK, the deed is done. Just pouring the boiling water over them and soaking for 30 seconds did not work. I used the complete boil method, pouring them into boiling water then letting it come to a boil again after it cooled off from the nuts. I waited a good 30 seconds after it came to a boil.

Rinsed and cooled them quickly in cold water. Drained on sheet, the skins popped right off. Then they seemed soggy so I roasted them a bit in a 325 convection oven. They are slightly browned, and smell nice and are dry.

I use the visual cue of when the skins look just a little bit wrinkled. It's usually right after they come to a boil. I hate blanching almonds...very tedious work.
