Is there any way to keep grated russet potatoes from getting brown except to use them immediately (as in, use them in 5 min or less)? Tips? |

Josh, Oil or water; however, those may not go hand in hand with your recipe. Oil works well for pommes Anna, it slows it down quite a bit. Water is better, I use this for French fries sometimes, when peeling ahead; it works well, but after a couple of days(an incident coming to mind) they still take on a reddish hue. Maybe reacting with something in the water, ive never investigated that. |

I keep them in water. This will likely also wash a little starch off them, but typically this is a feature, not a bug. Sure they'll get wet, but they were plenty wet to start with. For fries, I'll often spin them in the salad spinner to help dry them off; that obviously won't work for some cuts (or grating...) |

Water. Just plunge 'em in there. Don't keep 'em in there too long: they leach "stuff" that's good. Not more than a a couple of hours is my experience. ...lou |

Unfortunately, submerging them doesn't really work if I'm making hashed browns, where I want them to stick together. I guess I'll just stay with grating them right before use (as in, 2 minutes before). |

Josh, Jean had the answer. Latkes alway include grated onion and the sulphur keeps the potatoes white. Tim |

I always wash my grated potatoes for hash browns. I find if I don't, they turn bluish and get gluey. When rinsed, they still stick together, but lose enough of the surface starch to not become gross. I grate, rinse, squeeze dry in a colander, then S&P, and toss into pre-heated pan. I thought we all did this. Are there people who fry the potatoes without rinsing first? |
