Post subject:  Question on done temp for a rolled pork shoulder

I am cooking a rolled seasoned pork shoulder, just over 4 lbs.

What is the final temp I am looking for? The answers on various internet searches vary widely from 180 to 225.

Help. I want to be able to pull it apart easily.

I shoot for 190 - 195.
