What is the right division of eggs and cream? I've only make a few fritata's and have never used a recipe. I am never that happy with them, so some help would be appriciated. I plan on making this tonight. Would also like some thoughts on what to add. I have: Broccoli whole and broccoli slaw onions, vadalia and green celery brussel sprouts kale zuccini mushrooms bacon Cheese: Cheddar, Greyere, mozerella, goat, parm & a Greek sheep and goat milk cheese called Kasseri. I also have cream cheese and 2 soft cream cheese based spreadable cheese's. One is a white cheddar with green onion and the other a sharp yellow cheddar. I know I will add the bacon since my husband doesn't think he's eaten unless meat is involved. What else would you add and in what combination. I'd also like technique for a good fritata. Would you saute the veg in butter first? Thanks, Laurie |

I'm of the "less is more" when it comes to cooking...well, most days, and especially when it comes to delicate things like eggs. I'd pick one cheese and maybe two or three (lightweight) veggies and go from there. Amy |

I also would pick a couple of those veggies and one cheese. I My favorite combo with eggs is peppers and zucchini. I do fry up the veggies first as they can be too watery with the eggs. Just reread that and saw the list is what you have so I would pick:green onion, zucchini, mushrooms and bacon with the sharp cheddar. I would also go ahead and use Jean's recipe as a guide. Mary |

We like potatoes, red peppers, and mushrooms. Cheese is parmesan. Fry the veg first. Very good. fitzie |

I think I see my problem, I've been adding too much milk. Jean's recipe calls for only 1/4 for 8 eggs. I add at least twice that much. Thanks for the recipe and all the sugestions. Hopefully, I will have more sucess tonight than in the past. Laurie |

Laurie, Personally I don't use any cream or milk in a frittatta. Cream and milk are for quiche. |

I think I just don't love fritattas. It was OK, not great. I prefer quiche. I sauteed a little kale, mushrooms, onion, a zucchini and bacon. I added gruyere. It's just not my thing I guess. I love all the components, just not as a fritatta. It looked gorgeous however! Laurie |
