I just got 1kg of white Miso. (You can't buy Miso in the stores here, so mail order is the only option.) It's a LOT of Miso. How best to store it? Amy |

I used to keep miso around for stock, and it really seemed to last a looooooong time in the fridge. You might want to put to plastic wrap directly on the surface as I seem to recall having to scrape away dried up crust once in a while. |

Amy, JesBelle is right. Just press some plastic wrap onto the surface, put the lid on, and put the container in the fridge. The miso will last for about a year. |

I've kept miso for embarassingly long times. I mean more than one year. |
