Still searching for a recipe for lobster ravs. I want to find something to cut the richness of the lobster.

I've never made the lobster filling, but any I've had have always been very rich. But if I were trying to cut that, I think I might try something like a bit of spinach in the filling with the lobster. Or how about some fennel? The licorice/anise flavor compliments the lobster nicely.

So many of the recipes add a creamy cheese, and I think I'd avoid too much of that, since that would only add to the richness.

Just some thoughts - I have no experience with making it.

I didn't find anything in my cookbooks at home. I've been meaning to check my Italian cookbooks and archives of La Cucina Italia in Auxilary Book Storage, but I've had no time.

I haven't found anything tried-n-true yet, but I did see this recipe on the Food Network site. While the recipe seems far too involved, the gist of it seems to be poach the lobster meat in butter, saute some celery, carrot and onion (with the lobster shells to add more flavor), and use a white wine reduction to cut the richness, which all sounds good to me.

Poking around, lobster with corn seems one possibility for lobster ravioli. Charlie Trotter Cooks at Home has it, for example. There are also the odd one kicking around the internet

Still haven't tried this. Lobster is too expensive to screw it up! I do appreciate all of your comments. I think I may look in the frozen food section at the groc store & see if they have any.
