Hi,
I googled this question and read about eight ideas and about eight reasons that these do no work. It seems that 60 minutes is the max before you get bad tastes. Any ideas out there with T-Giving approaching?
I'm probably going to follow Kenji Alt's recipe: Peel, chunk, rinse & repeat. Boil water, cook 15 minutes, drain, rinse and rice. Add butter, etc.
I'm thinking about holding the riced potatoes for a few hours. I'd like to mircrowave them hot and then add hot butter and creme fraiche.
HELP!

Tim, sarah mouton says to rice, bag and then reheat in the micowave, then add butter/milk/etc.
I've used the slowcooker to hold them for a few hours with great success. thanks to Easybake for that one.

I pour a thin layer of cream on top and hold in a very low oven Ilene

Tim,
If you have an electric pressure cooker or a crock pot, they hold beautifully on the warm mode for a long time. Simply add some melted butter prior to serving, and they turn out great.
At the restaurant we simply hold the riced pots until ready to serve then add a (proprietary) blend of cream and butter at service (both warm). Works great.

My most recently reading recommendation was as per Amy's: Cook and rice (or otherwise mash and mush), add fat at service. Blumenthal I think. It seems like a generally solid idea.

I hold them in a crockpot. Put butter & cream on the bottom. They taste fine. This is about all I use the crockpot for. fitzie

I am grateful and surprised that my instincts (rice and hold) will work.
Now I have figure what kind of bag to use. A Gucci seems a bit pretentious. How about a faux Gucci?

The knock-offs often leave bad flavours. Use the real thing.

Well, the other problem with any gucci (faux or not) is that the bling tends to spark up in the microwave. Plus you run the risk of forgetting to remove the dog first. Tim, here in Canada we use a product called Ziplock. Not sure if they are available in your neck of the woods (perhaps try the grocery store on the wrong side of town) but if you can find those, I highly recommend them.
