So, tonight I made caciocavallo + roasted tomato ravioli. I only make ravioli about three times per year, because it takes me at least 3 months to forget how much work it is. For example, dinner tonight started at 8:30, even though I started cooking at 5pm. Not to mention the cursing. I always think "oh, I have a powered pasta dough roller and a ravioli cutter and I've done this a dozen times how long can it take?" And then I find out how long it can take (about 3 hours). What do you habitually underestimate cooking times/effort for? |

The sides.... It doesn't matter what I'm cooking, I've always got the main dish ready to go and the rice still has 15 mins. I eat dinner in "courses" on a lot of nights... |

Kate, lol...I can relate, although I'm much better about this now. If you cook a lot of rice, you should consider getting a rice cooker. I bought one a while back (mostly for sushi rice) and love it! Amy |

My fuzzy logic cooker, you can program when the rice *finishes*. Especially when we cook brown rice, I love this option. Its all ready when I get home..... |

My fuzzy logic brain says that when everything is done, THEN AND ONLY THEN is it dinner time. I have stopped trying to estimate an actual clock kind of time, much to my family's dismay. Mary |

I have the most trouble with breakfast. The toast is never done when the eggs need to come out of the pan. And the bacon is cold since it got done sooner than expected...sigh. |

A pro chef told me long ago to start with the end in mind: create the dessert first and work backwards to what should be done at the last minute. That and 'mise en place' have pretty much eliminated timing issues for me. |

Browning anything and stuffing a turkey. I always think it's going to be faster than it actually is. |

That is the gospel truth! The one major improvement is that since I started making my own bacon, it is worth the wait whether cold or hot. |
