My oven bit the dust and the new one won't be delivered until the 23rd.
I'd like to braise a a turkey breast on the stove top. Any tips? I've never done this.

I have a recipe for a pot roasted boneless turkey breast that I quite like, if you are interested.

Thanks. I'm having a root canal tomorrow so probably won't be in the mood for cooking anything.

Mary,
Lib and I had a wonderful Pot Roasted Turkey Thigh in Chicago a few months ago. I could not replicate that dish. Could you PM your recipe.
Thanks,
Tim

Hope your root canal went well Fitzie (main thing is that it is OVER). I am not sure this is a Chicago worthy turkey pot, roast but it might give you a starting off place, let me know if you try it with a turkey thigh. I am sure you can change the spices around quite easily. I like this mix so haven't messed with it, although I do thicken the sauce a bit.
1 1/3 cups de-fatted chicken or vegetable broth. 1 medium onion, chopped 2 Tb lemon juice 1 Tb olive oil 1 Tb finely chopped fresh ginger 1 Tb paprika 1 tsp ground coriander 3/4 tsp ground allspice 1/2 tsp ground cardamom 1/4 tsp salt 1/8 tsp black pepper 1 boneless turkey breast half (1 3/4 lbs), skin removed 5 large carrots cut into 1-inch pieces 5 large potatoes, peeled and cut into eighths 4 large onions, quartered
In a Dutch oven, stir together the broth, chopped onions, lemon juice, oil ginger, paprika, coriander, allspice, cardamom, salt, and pepper.
Add the turkey and bring to a boil over medium-high heat. Reduce the heat, cover and gently simmer for 8 minutes. Then turn turkey over and continue simmering, covered, for 8 minutes.
Layer carrots, potatoes, and onions around the turkey. Cover and simmer for 25-30 minutes until the turkey is tender.
Serves 6.

Thank you, Mary. I like the sound of all the flavorings.
As to the root canal, I had a bridge fall out. Went to my dentist and he said I needed a root canal & a post. OK. 5 weeks ago I got the first stage of the root canal. Got the final stage & the post today. He put my bridge back in and said the "glue" should last up to 6 weeks and that my dentist would have to put it in permanently. Came home, sat down, had drink of cold water to ease my parched throat, and the damned bridge fell out! Can't get in to see my dentist until 2:00 next Tuesday. Rats!

Oh geez. This has been my year of dentistry as well. It is not so amusing. Cut your turkey into very small bites.

I made a turkey breast in milk with garlic, lemon and sage, like the Italian pork loin in milk. It was grand. Both meats are fairly low in fat, and tend to dry out, which is why I though of this. My SIL won't eat pork, so a turkey variation is nice to have.
