I generally just have it with a baguette and Champagne so I could use any ideas.

Baked brie. Wrap it in puff and decorate, brush with egg wash then bake.

My favorite way to deal with brie is to add nuts, maple syrup and perhaps a few grains of brown sugar. Done galette style or fully wrapped, my dough of first choice is usually pie pastry. Amy I cover the top in apple butter, wrap and do as above. yum. Fig jam would be nice there too.

I 2nd the pepper jelly. Great baked not en croute too (in a small casserole) and served with sesame rice crackers. Also good baked into mini phyllo or wonton cups topped with red currant jelly (a nice bite sized appie).
