Does anyone make their own marcaspone? I bought tartaric acid, and I have made it three times. The first time was a success and the last two were failures. To add insult to injury, the first time I used Trader Joes packages UHF cream! The last two was fresh cream from the store and did not set at all. >:|
What am I don't wrong here?

Pretty much exactly that, but the last two times it poured completely though the butter muslin.

Hmmm. Beats me. I haven't actually made my own very much because most of the grocery stores we go to stock mascarpone fairly inexpensively.
