I've read severail recipes calling for Aleppo pepper paste lately. What is it? Where can you get it? Thanks. Fitzie |

Penzey's sells dried/crushed aleppo peppers, apparently. You can get either aleppo peppers or pepper paste through Amazon, but not aleppo pepper paste. Not sure if I've helped... ETA: This Epicurious recipe says: Quote: If using Aleppo pepper, place in large bowl and mix in 1 tablespoon warm water. Let stand until thick paste forms, about 5 minutes.

Fitzie, There's also Turkish Red Pepper paste, which is made by pureeing lots of red peppers (such as Aleppo peppers, or red bells for a milder paste) and then cooking them down over low heat for several hours. If you're dealing with a recipe which calls for 1/4 cup or 1/2 cup of red pepper paste, this is probably the kind they mean. |
