Frozen, very clean, no or little bone, skin, fat. It is from a large sporting/game farm over in Montana. Can anyone point me in some good directions for cooking ideas? I think I would like to have a dinner party for six, to include my nice neighbor who just brought it over. |

My Dad and brothers are Pheasant hunters and my Mom would always make a stroganoff. I haven't had it in years, but remember how rich and lush the sauce was. She served it with buttered noodles. Wish I had the recipe for you, but I'm guessing you could find one if you like the idea. Laurie |

Braised in calvados, served with caramelized apples and onions. With no fat, a sausage where you could use other fat would be nice-perhaps some dried blueberries and juniper in there too. Poached and served with a red wine reduction. |

Thanks for the ideas. I just looked up pheasant in JOC. Becky those ideas of yours are similar to Pheasant Smitane in that book. Most of the recipes call for meat on the bone. |

That was part of my plan, they have a word for it in JOC. I'll surely report in on how it turns out, I have until early Jan to figure it out. |
