Lou, that's funny because I HATE it when my pancakes are crispy on the outside - I want them to be like diner cakes - soft, warm and comforting, with a foul-mouthed waitress flinging the plate onto the table.
Anyway, I found the CI recipe to produce the results you desire. You may want to check it against the JOC recipe to see what's different. I believe, but am not sure, that they use more fat in the pancake batter and that's what enhances the crispiness.
PS: I have joined the Dark Side - I now love cilantro. Don't ask me how it happened - maybe it was when they beamed me up into the shiny disc...
