Post subject:  Crispy Pancakes

Anyone have any tips on making pancakes that are nice and crispy on the outside, you know, that crunch a bit like they've been fried but still are fluffy in the middle. Everytime I turn up the heat I just wind up burning them.

This can also be related to the fact that I don't use a lot of butter or oil in the pan when making them. I'd like to avoid adding more, if possible.*

The pancake recipe I use is from Joy of Cooking too.

Lou, that's funny because I HATE it when my pancakes are crispy on the outside - I want them to be like diner cakes - soft, warm and comforting, with a foul-mouthed waitress flinging the plate onto the table. 8-)

Anyway, I found the CI recipe to produce the results you desire. You may want to check it against the JOC recipe to see what's different. I believe, but am not sure, that they use more fat in the pancake batter and that's what enhances the crispiness.

PS: I have joined the Dark Side - I now love cilantro. Don't ask me how it happened - maybe it was when they beamed me up into the shiny disc...

Fry em in lots of butter...that gets crispy edges.

I'm with Darcie - gotta have 'em soft and tender, never crisp. But on the occasions I did end up with crisp ones, it was more fat in the pan and in the batter coupled with higher heat.

I'm on the dark side too, cilantro lover, by the quarter cupful! I know that must sound horrifying but it's true!

Good luck in your crispy pancake quest and great to "see" you again over here.

PS - just remembered, add some rice flour to that batter. That rice flour will crisp up anything! Oh, and the waffle iron will too...

Well, since this thread is 9 months old, I'm sure Lou has already made the pancakes. However I'll chime in to say that if you add a little extra liquid (milk) to the batter and thin it a bit, the cakes will be crispier around the edges.

I put butter in the pan & pour the batter on that...crispy edges every time..
