I was raised Lutheran in the tundra - I can't help but feel guilty about using that much butter for one meal. :( What would I do with the butter when I'm done? It won't be bad, I realize, but I usually use butter for cakes and sweets. I guess it would give new meaning to the term "beefcake!"

Of course, I have 10 pounds of pork fat in my freezer (still) - I suppose I could poach the steaks in that... :twisted:

I followed that thread and actually tried the technique out. I have a reasonable batting average when cooking, but everyone has to miss sometime ... I ended up overcooking it, and though it wasn't bad, it basically tasted like roast beef. Pretty decent roast beef, but still roast beef, not steak. Someday I'll give it another go.

There's an article in today's New York Post (no, I don't read this paper, it was linked to from one of my cooking-related corporate "friends" on Facebook).

The Post calls this butter-poached lobster the "Greatest Dish in the World".
