Tim, I live in Maui...and things are limited due to shipping costs...we have only one Costco, one Walmart, one K-Mart on the entire island...Whole Foods recently opened last year...it's very expensive to shop there...the cost of living on paradise...

Tonight I made this chicken on the Weber Kettle...I followed Tim's recipe, but smoked the chicken using the indirect heating method. I added soaked hickory chips to the coals and covered the grill with the vents open and turned the chicken following the recipe. It was fabulous. I wanted to take a pic (it turned mahogany and really puffed up), but we were all too hungry.
