Post subject: In search of cupcake recipe for Bake Sale

Every year our fire dept. has a bake sale. I always make something fabulous so they can get a good price for it. This year I am making 3 small bunht cakes each with a different topping and cupcakes. In the past I have made the CI strawberry creme cake, and the lemon filled cake as well as red velvet cupcakes. Also one year I did a version of the strawberry creme with rasberries.
I found a large deep tin with a cupcake motif and thought that would be a good vessel for them. Any idea's on a fabulous cupcake to make. I think the tin will hold 10 or 12. I have fondant so I can make some pretty decorations. I need to bake Friday for Saturdays 8am sale.

The carrot cupcakes with orange icing from epicurious are tasty, and stay nice and moist. Something in zucchini and chocolate would also be seasonally appropriate.

I decided on Ina's recipe since I had everything in the house to make it. I barely have enough flour and sugar for the recipe. I don't really want to buy more sugar and flour since we are low carbing and won't be using it. So friday morning I bake. I haven't baked in months. I really miss cakes and pie's and cookies and ............
