I'm trying to use up some of what's in my pantry, and I've been staring at these friggin' manicotti shells for too long. Favorite manicotti recipes?

CI May 2008 -- Baked Manicotti with Spinach. It's a nice manicotti for summer. It just has a sort of light flavor and texture. It freezes really well, too. I usually make a full batch and freeze half. I do use whole milk ricotta and mozzarella if I'm going to freeze, though. Also, if it's any recommendation, Cary adores it.

Just keep in mind the kid will eat ricotta smeared on a saltine, so he may be a little biased. ;)

Jesbelle, did you see the homemade ricotta recipe on smitten kitchen?
Ricotta on a saltine with cranberry sauce is amazing.
