 Post subject: Petit Pots a l'Absinthe

There's a recipe for this is in the current F&W that I'd like to make. Local liquor store doesn't carry Absinthe and I don't want to drive 10 miles to get 1-1/2 T of Absinthe. Can I substitute Pernod? How would it compare? Sweeter, stronger? What do yu think?

Fitzie,

Ouzo would be a better choice. Like Absinthe, it is not sweet, pretty high proof and made from anise. Actually, nowdays many ouzos are infusions which include other herbs.

Pastis (Ricard and others) or Anise (Pernod) are somewhat sweeter and lower alcohol. They are also made (Pastis is an infusion, Pernod is a distillation) from a number of herbs.

Actually, considering the whole recipe uses 1 1/2 tablespoon, it would take a supertaster to tell the difference.
