 Post subject: Stabilize Whip Cream Recipe

I am in need of a recipe ASAP...I made CI Key Lime Pie and would like to top it off with whip cream...it's hot and humid here and I need a topping that won't weep...I remember a recipe using gelatin...thanks for your help!

I learned this trick years ago from Maida Heatter's first book. and have been using it ever since.


Dissolve a half teaspoon of gelatin in a tablespoon of water. Heat just until it melts.
Let it cool a bit before beating it into a cup of cream (along with sugar, vanilla, etc).
