I wanted to make some Coconut Cupcakes for a friend...she is crazy about coconut...I'm probably the only one who doesn't like Ina Garten's recipe for Coconut Cupcakes...it didn't have enough "umph" for me...does anyone have a tasty, knock your socks off Coconut Cupcake recipe? Thanks so much!

Sorry Lu... I use Ina's, bit add much more coconut to the batter.

I find Ina's a bit dense. CI's coconut cake is good. I wonder how it translates into cupcakes.
