You may want to add a bit of fennel seed to your pizza sauce. I use Penzey's pizza seasoning and tomato sauce for a quick sauce and I really like the flavor. After reading the ingredient list I realized that the fennel made the difference. I also cook it down to thicken it (and as you said, darken it).
