Gerard,

This is the setup that I was talking about. It includes a large pan of boiling water, two large firebricks shielding the very small fire, only 16 small natural briquettes, two knobs of pecan, one upside-down roast rack with room for 6 ribs. In this case I have St. Louis Spareribs.

My nephew told me that the winner of his friend's rib contest made Deep Fried Ribs.

Tim, impressive!

Todd- I can't imagine what they'd taste like. I can't see them being tender unless they were cooked before frying. interesting.

There is a place here that sells fried ribs, they are actually featherbones (AKA Applebees Riblets) they are tender enough...they have a little chew.
