I'm looking for a good quiche recipe. Normally, I would go to CI and try theirs, but :evil: their website is down. Anyone have any ideas where I can find a basic quiche recipe with ham or bacon and cheese.

Do you have Julia Child's Mastering the Art (Vol. I)? That's the best recipe for quiche I've ever used and it's very simple. Let meknow if you need the recipe

I seem to be overstocked on Gouda. Wondering if that would be a good substitute for swiss for quiche? I actually usually use Jarlsberg in mine and figured gouda wasn't too far off of that. Thoughts?

Gouda would be fine. I'd just use veggies that are Gouda friendly, e.g., spinach and mushrooms.

thanks Amy. We're pretty boring with quiche, brocolli always, ham often and bacon sometimes. If I'm making 2 I do an asparagus one with the addition of some feta or goat cheese on top. great idea to add spinach, we all love it. I'm guessing the frozen kind, thawed and well drained? (potato ricer) Mushrooms are never a part though, I have a texture issue with them.
My boys used to eat Gouda a lot, but now they go for the grana or parm, or the Balderson 2 year old cheddar (Paul, totally your fault that I started buying this, thanks....I think) and Costco had Gouda on coupon twice in a few months, so I have 4 quarters vac sealed in the basement fridge.
Good thing I just made 14 pie crusts on the weekend and put them in the freezer. :-)

Reporting back. Made quiche tonight with the gouda and it was great....even with the almost past its prime broccoli I threw in. ;-) Thanks again!
