Andy's not exactly crying...
Lisa, don't know if you noticed the cartridges you pointed to aren't in stock. I know you don't need them right away, but just fyi.

It's not only stable, it reheats beautifully!
I decided to see how it would hold, and it does. I threw it back into a bain marie this morning, and with an additional cartridge (may not be necessary in the one-pint canister) it was as good as new!
Doing a happy dance...Hollandaise no longer a taboo menu item for catering events!
