Picked up 8 frozen veal scallops today and have some beautiful recipes from Master Recipes by Stephen Schmidt but wanted to ask y'all for any faves you may have. If it helps, I was just given some dried morels from a client's son...

Ah, no we kinda wing it, you know season, flour, egg, bread crumbs (panko is nice too), fry till golden on both sides (needs to be pretty hot if they are very thin), consume! It goes will with pickles, mustard, mashed (or boiled if you must), mushroom sauce, cheese.... well you know, this is classic eastern-ish european cooking, so the usual apply. We like it with at least one green, prepared bright (so not roasted).
