 Post subject: Greek Pita recipe?

I have pretty good recipes for Arab-style pita (chewy, whole wheat with a pocket in the center).

However, I haven't found yet a good recipe for greek-style pita, which is soft, oiled, white or part-wheat, and doesn't have a pocket. Anyone got one?

(yes, I can google some. but nothing from trustworthy sources. I'm looking for something road-tested if anyone has)

Flatbreads and Flavours doesn't have one? I thought it did. I've never made them but like you seen lots of blogs/sites about it.

I have a Julia Child recipe for pita. It puffs up while baking and then flattens out. Let me know if you'd like the recipe. I've always had good luck with Julia

I have a good one too, it's called Olga Bread. I can post if you're interested. I posted it on the OMB and a lot of folks made it.

The recipe in F&F, as well as the Julia Child recipe, are "Arab pita", the kind that puffs up and has a pocket in the center.

"Olga bread" may be more like what I'm looking for. Lemme see if I can find some pictures ...

Here's Greek-style pita bread. Notice that it doesn't have a pocket, and looks "grilled":

... it also seems to have more olive oil in the dough.

Ah, I thought it had both. My bad. We love the greek style pitas the best and they make great pizzas in a pinch. But I've never made them.

Well, the greek pita isn't chewey, like naan ... it's quite soft.
