I could use your brains...mine has left me due to husbands recent surgery, work, and life in general. I need to take something to a pot-luck tomorrow...preferable finger food, but something main-dishy....I have been trying to think of something like a frittata that would be a bit different and hold together, but that's not coming to me. Any ideas would be greatly appreciated!

What about kebobs? If you do them on short skewers, they are most definitely finger food. You could one with chicken, one with beef, or even lamb, one with shrimp. Pair each with appropriate sauces.

I made a Southwestern cheesecake for one, sounds odd but was very good. Not really finger food, but could be in a pinch. Empanadas would be good too. And they are finger food.

Three Cheese Baked Eggs, an old Epicurious recipe has made many appearances at our house and frequently gets baked in mini-muffin tins. Fairly quick to prepare with a "crust" that makes itself. Very tasty as well. Can be finger food in either form.

A Spanish tortilla, served at room temp, can be finger food.

Mini quiche. Not different, but people like them. Frittata squares. Spanakopita done in bite sized triangles, maybe?

Thanks, everyone, for all the suggestions! I am going to use some of them in the future, for sure...but last night I didn't get home until after 9, so after checking here and then checking all my ingredients, I decided to follow Amy's advice. I found a recipe in one of Ina's books for chicken skewers with a lemon-thyme marinade and served with a satay sauce for dipping....I had everything on had, and the chicken is marinating right now. I'll let you know how it turns out. Thanks again for your help..

To report back, it was....meh....not that exciting. People ate the chicken, but no comments on it, which is always telling! Don't think I'll try this one again. Thanks one again for your input.

Cookie,
Satays can be "meh." If you want to repeat something like this in the future, go for true kebobs. The meat has enough heft so that it doesn't dry out. Sorry it didn't turn out as you would have liked.
