I had planned on making Pina Colada's when Barbara got home from work tonight. She works at Hanniford. I just talked to her and she was all excited because she found cream of coconut and bought it. I hadn't even mentioned it to her and for the first couple I was just going to use Coconut milk. I will keep you posted how they come out, I think that even slight modifications and we are on to something, actually it may not need anything.

I made it with the cream of coconut and rest of that recipe although I did add a little heavy cream that I bought for the occasion. They were great although I did have a problem, I made two and apparently the glasses which we just purchased are thin and one on the head board just blew up, what a mess. But the drink was great, I made two big glasses so Barbara shared her's with me. Boy was it cold, perfect summer drink.
