Lemon tart, lemon bars, or lime bars... That can be eaten frozen.

Amy,
If the terrine idea falls apart, sliced strawberries with flavored balsamic vinegar (we have some chocolate balsamic) and a little whip cream are excellent, easy, healthful, and inexpensive. Not wow though.

Thanks josh, but trust me, the terrine won't fall apart. At least I hope not. Amy

So, I picked up all of my serving platters from my client's house this morning. There was a teeny sliver of the terrine left, so I finally got to try it properly. Very nice...very refreshing.

Lisa,
I made Keller's version, and would actually recommend that over FC's.

Amy, If I bring home another cookbook my husband will kill me. We are on a LIFO schedule here. But I will look on the web for it. --Lisa
