It's not fancy, but I tried the Sweet Kale Mix from Costco a few months back and now we don't want a salad without it! We mix it with half romaine and then whatever other veggies we have on hand. I actually don't like either kale or brussels sprouts (which are part of the mix), but in this combination/preparation they are really delicious. The dressing is really good too. I was saving the packets and putting them with salads I was taking people for new baby meals or whatever, but then I tasted it. Now they don't go anywhere but on our salads. Emilie

Sounds good! A couple weeks ago my grocer had baby Tuscan kale in bulk; I made a salad with that and chickpeas and other veggies and blue cheese dressing. Was great.

My current love is from Jeruselem; baby spinach, red onions, dates and pita and almonds that have been fried in butter with chili flakes and sumac. It is sauced with lemon juice and olive oil. I also make a sweet potato and black bean salad that pleases me mightily.

Mary,
Would you please post that recipe for your black bean and sweet potato salad? Black beans are my favorite beans for using in Mexican cooking, and I also use them in salads a lot, so that caught my eye, for sure.

p.s. Speaking of red onions, I started making marinated red onions after I got the newest Nordstrom cookbook recently and made their strawberry & chicken salad (the onion recipe is within the salad recipe). Love everything about that salad but the onions are the star. Now I put them on almost everything except breakfast!

Emily, we also use that kale mix from Costco when we are pinched for time. Throw in some tomatoes and avocado and even a little chicken if we have some and it is a really good, quick meal.

I just made my trip to Costco last week (I go maybe once every couple of months) and I hadn't read these posts then. I'm disappointed that I didn't buy this kale salad. Friends are now telling me how good it is also. Why isn't it available in grocery stores?

I don't know the recipe you are referring to, but there is another recipe I use from Rick Bayless that I have been making for many years, which I also put on countless salads and other foods. The marinating minimizes that raw onion taste and aftertaste, but they still have the onion taste, and they are delicious!

Right now I am enjoying a salad posted on the Splendid Table website. It consists of corn, tomato, and avocado with a lime/extra virgin olive oil vinaigrette. It is delicious!
