You all are a bad influence. Last night I bought ingredients to make this even though it is 20 degrees too hot and 20% to humid to do so.

My Thermapen chose the wrong time of year to poop the bed. I made a batch of toffee last night using a glass candy thermometer but I missed being able to hold the probe with my hand out of the way of the heat. My pan of choice is a saucier without straight sides so I can't clip the candy thermometer in very well.

My thermapen has been back to Thermoworks TWICE for service. They tell me it's due to water damage. I don't buy that. Number one: my Thermapen never gets near water. Number two: I live in one of the most arid climates imaginable.
I wish there were a better instant read alternative...

I finally gave up on the thermapen a few years ago. I have this guy now. It won't work for candy and the probe isn't as long as a thermapen, but it is just as fast and it hasn't given me a second of trouble. I like my glass thermometer for candy and frying.

Amy: Any idea what the turnaround time is at Thermoworks? They acknowledged receipt over a week ago and since then, silence. I expect to hear something from them once they open and inspect the Thermapen, right?
Ours has been beat up a bit - a little case warpage from heat and then I melted the end of the lanyard on the grill or smoker. Any savings from buying a new one would be nice but otherwise I'm going for one with a backlight...

I have been using my probe thermometer for candy, bread, deep frying, roasting, etc for a while now. I find it much more accurate than a candy thermometer, and more resilient than a thermopen apparently. Mine went back twice before I gave up.
Plus, it doesn't get in the way nearly as bad for candy making.

I want to say it was about two weeks? And, as I recall I didn't hear from them after the looked at the unit. They just fixed it and billed me. But, I must have given them an authorization to do so. I really don't remember the details. The last time I sent it back in was a few years ago.
Just call them.

btw, I almost never take the temp of caramelizing sugar...I just go by color.

If I had a piece from a previous batch I would feel more able to go by color (and I'm not a seasoned professional like some of you  ).
