I would like to try this terrine, but have never bought or used gelatin sheets. Am I in over my head? Do you have to order them usually? Thanks, Karen |

I've found that I way prefer marshmallows made with sheets, I find them hard to find. They aren't Prime, but Amazon has them. |

PerfectaGel Silver Gelatin Sheets (170 Bloom) - 20 Sheets http://amzn.com/B009GJXSMS These are Prime, but I'm not sure how marked up the price is? |

That's really marked up. I use Gelita bronze sheets which you can buy through Amazon. (I got mine through Qzina.) Cost/sheet is far less. But, if you're not going to use a lot of gelatin (although sheets last for frickin' ever), you may just want to shop overall price. Amy |

And I bring the powdered stuff because there are only sheets here. Mary |

Karen, Here's a link to the Keller recipe. Note that the crème fraîche is NOT supposed to go into the champagne layer. I misread it the first time through. That and the mint are garnishes. It's a really nice summer dessert, and my client loved it. Note that this recipe does not yield a large volume. I created a dam in my terrine to make it work. Next time I make it I'll triple the recipe. Amy P.S. I have a dehydrator, so I used that instead of leaving the strawberries out overnight. Worked great...concentrated the flavors really well. |
