Green Chili is more of a New Mexico thing, while good, it holds very little sway here in the land where chili was created. .
Also...we do not consider International Chili Society to be a legitimate organazation in regards to representig "real" chili.

Frank, I ASSUMED that the inclusion of green chilis in your recipe qualified it as a chili verde - so much to learn  I also noticed that three of these recipes exclusively use pork. Since we grow our own grass fed beef and my understanding of the history is that chili was a product of necessity in cattle country, I can see where I'm going to have to study hard! Lindsay, I think the chili burn is just part of that macho love. Men sweating is just a sign of bonding. (Can't wait for the replies to that one!) Frank - If you're going further north than Oklahoma in Feb. to fetch the little ones, I better send you a real parka.

Dear Frank,
Thanks for the background on how to serve this chili if you're going to serve it "real Texas style!". I'm just a little shocked those cowboys of old who concocted this didn't add biscuits or tortillas or cornbread or something TO THE SIDE. I suppose saltines are sort of like modern day hard tack though. I'm not surprised they didn't include any veggie side dish though, very rare to have fresh ones way back when, not to mention they are usually not favorite sides for many men. (Before I get a reprimand from the veggie eating modern guys here, I mean the real-cowboy type/manly-men type of days gone by who many times didn't love their veggies!)
I can't wait to make this recipe. Has anyone else made it yet?
