Anyone have a great Risotto Milanese recipe to share? I've a serious hankering for it, but cannot find the recipe that I've used in the past; it added fresh spinach and was very good. |

Jenny, If it added spinach, it's not Risotto Milanese, which has only rice, saffron, and stock. Not that spinach risotto is a bad thing, it's just not Milanese. I make lots of risotto too and seldom use a recipe. I would do Fuzzy's, use the wine, add the fresh spinach towards the end. I also like to put something creamy in with the parm. Usually a little of what I have on hand, cream, sour cream, cream cheese (very good). Our "house" risotto is basically this and then I fry up some cubed bacon and chicken breast and mix that in when the rice is cooked. I just got a Swiss cooking magazine that had a risotto with mache, pear and Gorgonzola-mascapone mixed in. If I try that I will report back (this month's issue was amazing so I am not sure I will get at everything that interested me... chicken breast with a cheese soufflé topping???). Mary |

Hi, One of my boys travels to Milan on business. He is always calling me to tell me about the Risotto Milanese and Osso Buco that he is putting on his expense account. It gets worse, his company require first class tickets on any flight over 5 hours. Tim Thanks for the reicpe. |

Josh, it's not "traditional" Risotto Milanese but I got the recipe from my friend who recently emigrated from Reggio Emilia - she just stirred in fresh spinach at the end for some extra nutrition. Mary, gorgonzola/mascarpone?? What are you doing to me?? I just gained 5 lbs. from reading that description. Tim, clearly I'm working for the wrong company....sigh... |
