Not my forte, I've got to admit... I need to make a couple, and not in my own kitchen, so won't have all my usual gadgets to draw upon...if I did, I'd make my lasagna bolognese. Suggestions? It needs to be neutral enough that everyone can eat it, from a child of 12 to someone 80ish. Amy |

Is chicken pot pie a casserole? I guess I don't make many either but I don't know why. Mac and cheese? Shepard's pie? Moussaka (my fave but it does contain the dreaded plant of the egg)? I think that is my entire repertoire. I will be watching this space as well. I think I need more casseroles in my life. Mary |

Gawd, all we eat around here in the winter is casseroles. I second the Baked Ziti, it is very good. We like the Shrimp and Orzo Casserole from C&B Creamy Baked Penne and Chicken with Mushrooms from BMA is excellent, but it is definitely a make-ahead recipe. It really isn't nearly as good if you don't at least give it a good long rest in the fridge (like overnight, if possible) before baking it. Strata is also a favorite, especially with The Little Guy. |

Amy, I did this one specifically because the equipment and time required is minimal: http://www.fuzzychef.org/archives/The-B ... l#extended (scoll down) However, the poquillo peppers could be hard to get where you are; not sure how it would be with bell peppers. You could try. |

Just thought of something... my mom makes stuffed cabbage but instead of actually stuffing she puts the cabbage leaves down as if for lasagna. I may have to make this myself, I have a strange urge for a casserole... Mary |

Hi Amy, Do you have cover & bake? If so, I recommend either the Thanksgiving casserole (I think it has a different name but it's turkey, stuffing, cran sauce & gravy) or the beef teriyaki casserole. Both are easy, no special equipment required and definitely crowd pleasers. I'm partial towards the beef teriyaki casserole myself... Kate |
