Every year our fire dept. has a bake sale. I always make something fabulous so they can get a good price for it. This year I am making 3 small bunht cakes each with a different topping and cupcakes. In the past I have made the CI strawberry creme cake, and the lemon filled cake as well as red velvet cupcakes. Also one year I did a version of the strawberry creme with rasberries. I found a large deep tin with a cupcake motif and thought that would be a good vessel for them. Any idea's on a fabulous cupcake to make. I think the tin will hold 10 or 12. I have fondant so I can make some pretty decorations. I need to bake Friday for Saturdays 8am sale. Laurie |

The carrot cupcakes with orange icing from epicurious are tasty, and stay nice and moist. Something in zucchini and chocolate would also be seasonally appropriate. |

I decided on Ina's recipe since I had everything in the house to make it. I barely have enough flour and sugar for the recipe. I don't really want to buy more sugar and flour since we are low carbing and won't be using it. So friday morning I bake. I haven't baked in months. I really miss cakes and pie's and cookies and ............ Thanks again, Laurie |
