Post subject:  ISO Jalapeno Jelly recipe

Getting lots of peppers lately. Thinking about making some jam/jelly.

The typical recipe I'm seeing boils chopped peppers in cider vinegar, add sugar & pectin & spoon into jars. Sometimes the chopped peppers are strained out & fresh chopped peppers are added before canning.

Years ago I made a recipe that boiled vinegar, sugar & peppers down to a sort of demi-glace.

Anybody have a fantastic recipe for jalapeno jelly?

Pete, somewhere here is my pepper jelly recipe. I know a few folks here have made it and liked it. It is a favorite of Todd's. I'll see if I can find it for you. Mine does not strain the peppers. I usually use a variety of hot peppers, but you can use all one kind as well.

just remember to wear gloves when making!!!! (which reminds me...Nancy still owes us a story about peppers)

It occurred to me as I was chopping that I probably should have put on those gloves I saw earlier...
