Post subject:  Savory Cupcake Recipes

Hope you all have been well :) I really wish I had time to be here more, but the volume of business at my salon is almost overwhelming (not a bad thing) and there is little time for cooking outside of the basics these days. However...

I am entering a cooking "contest" of sorts at Donna's place of employment: the contest is on savory cupcakes. Does anyone have any recipes they would mind sharing or even flavor profile suggestions?

Hey Tiff,

Great to "see" you girl!

I've always loved the idea of lasagna "cupcakes." You'd have to use fresh pasta dough to do it, but they'd sure be fun!

Love the lasagna idea. It occured to me that you might be able to do a riff on the whole yellow cupcake with a jam filling by doing a cornbread cupcake with a taco/chili filling. No idea if that would work (and if the filling would have to be kept hot to be foodsafe)....but it's where my mind went with savory and cupcake.

I made one once with a torilla shell shoved into the cupcake tin, brushed with oil and baked, then taco meat filling added, top with cheese, tomato's and sour cream.

Great ideas! I make fresh pasta dough fairly regularly, so lasagna cupcakes wouldn't be a hardship.

Because this is Florida, I was also thinking about a riff on mojo pork or something like that. Or the Cuban sandwich morphed into a cupcake.

I keep thinking some sort of olivey muffin with a whipped feta frosting. I'd eat it.

I've made corn muffins with a hard boiled egg baked in, and bits of sausage in the batter.
