Post subject:  What's your favorite Carrot Cake recipe?

I enjoy a good carrot cake. I've used CI recipe for years but would like to try a new one....what's your favorite?

I personally like the Frog Commissary recipe. Not sure if the link I just gave is the same recipe I've made, but it looks like it.

Amy, do you reduce the baking powder by half due to altitude? I'm at 5000 feet or a bit better. What would you recommend?

At my altitude (8750) I reduce by half. You wouldn't need to go that much...but, it may take a little playing around to get it just right. I'd start at 25% reduction and see how it turns out.

I like CI's recipe but I do up the spices so it's less bland.

The Frog Commissary recipe looks really good, especially that pecan cream filling!

DH loves carrot cake and when I found "Berta's Carrot Tea Cake" recipe in Sheila Lukins' "Ten" cookbook, I knew I'd struck gold. This recipe appeared in one of the original Silver Plate books and has always received rave reviews. This recipe makes a 9x5 loaf cake and can be frosted top only or over the entire cake. Now DH is a happy man and I don't have to worry about what to do with a huge carrot cake.

Google "Berta's Carrot Tea Cake" for the recipe.

Thanks everyone for sharing....Amy, the recipe calls for a 10" tube pan but then says, "cut into 3 layers"...I assume this is an 8" cake...the cake looks really good...Silversage...wow, beautiful cake!!...thanks again!
