A friend just gave me some pasta (spaghetti) made with the skins of red wine grapes ("Pasta caberneti": . The noodles are very dark red ... inky, almost. For once I have no idea what to do with pasta; what would these be good in? What would they compliment? http://www.marchenoirfoods.com/catalog/i26.html |

The first thing that comes to mind is chicken livers. Not very helpful. Tuna is the second thing that comes to mind. Maybe a variation on that old CI recipe with the tuna and olives. |

My first thought was "wine and cheese". A friend told me about digging out a small hole in a piece of Parmasan cheese, filling it with good balsamic vinegar and letting it sit a day or 2. I thought this would be wonderful shaved onto your wine pasta with some olive oil and topped with toasted pine nuts. And a side of broccoli sautéed with garlic. Maybe some sage fried in the oil before dressing the pasta with it? Never heard of wine pasta, let us know what it is like. Mary |

Back to the topic, I've decided to do a dairy-free tuna pasta with this. That's strongly influenced by receiving someone's caught-themselves canned tuna in a Christmas gift basket. |
