Post subject:  ISO Onion Soup Recipe

Needs to be on the healthier side (dietary restrictions) but I can always make my own adjustments. I have used, and enjoy, the CI Red Onion Soup recipe, but would like to try something more traditional. I know there are 1,000's out there so looking for a good winter favorite of yours if you're willing to share.

I use Julia's recipe in volume 1. Can't say it's particularly healthy. Do you have that book?

Thank you both. I feel silly that I didn't think to look at JC's cb's. Found it and have it on the stove as I type.

I use the recipe from Best Soups and Stews (I can't recall if it's the red onion version or not off the top of my head), only made with the homemade Rich Beef Broth. Probably not truly healthy, but very tasty.

I have only made onion soup a couple of times and the last time was JC's recipe and it was excellent.

The soup I made was good day one, but truly excellent the next day. I used a combo of red and sweet onions, and low sodium Kitchen Basics Beef Broth along with my own vegetable broth. And per the JC recipe I added 3 tbsp cognac at the end. Other additions were 2 parmesan rinds, fresh thyme, fresh bay leaves and a dribble of worcestershire.
