Post subject:  Meatloaf

I'm having friends over on Friday, and one has requested meatloaf. The other has food intolerance issues with both gluten and dairy. So what do I substitute for the cracker/buttermilk mixture I usually use for meatloaf? I don't want to buy any special gluten free ingredients if I don't have to; I'd rather use pantry items I already have.

I'm thinking of using applesauce in lieu of the buttermilk for moisture. Too sweet? Also, I thought about quick oats in place of the crackers, although there is some question that oats have gluten. Any advice would be appreciated.

I've used mashed potatoes in meatloaf. If you make them with stock and margarine instead of dairy it should be ok.

Yeah, it looks as though you need to be careful to buy oats that are certified as gluten-free. I guess wheat can sneak in there during harvesting or processing. That would probably necessitate more of a special shopping trip than gluten-free crackers, which are available in practically every grocery store now.
