I need to make a salad for about 30 people for tomorrow night. Can anyone give me a guide as to amounts of things like greens, strawberries, onions, nuts, whatever? I'd just like to have some kind of guide when I walk into Costco. Heads of lettuce I can figure easier, but I'm taking the lazy way out. Thanks! |

nope, no other salads, just apps and lasagna. Simple dinner for a simple group! |

My guess would be three heads (not just the hearts that some places sell) of Romaine, 1 Thinly sliced onion, 1 pint or more of strawberries, sliced, 1 pint of grape tomatos or cherry tomatos cut in half depending on the size and a cup of nuts or seeds and 2 cups of croutons. Anybody else venture an educated guess? |

I'd probably buy 2 mixed green salad packs from Costco (about 1 lb each) and a package of their grape tomatoes, no more than one onion, and about 2-3 cups of croutons. My favourite way to serve the mixed green salad is with crumbled goat cheese (1 costco size log would be more than enough), blueberrys (again, the costco sized package is way more than you need but I've been using the dried blueberries from costco lately and they are quite nice) and walnuts, about 1 cup chopped per salad package. Or to slice the log into rounds, dip in frothy egg whites, then in panko, freeze until just before dinner and then fry in oil - do this instead of croutons. yummy. Mix up 1.5 packages of the salad and be prepared to throw more in if you need it. I'm not sure if I like the salad with fruit to go along with lasagna, so would likely do the goat cheese fried rounds instead or stick to croutons. Or just buy a 6 pack of the romaine and make a ceasar salad with kirkland bacon bits and the dressing they sell there. I really really like the La Maison caesar dressing from there, although it might not be the same brand as in Canada. Good luck! |

Thanks for all your help! I will figure out what to put in it when I get there. the blueberries sound interesting and don't require the slicing...It is interesting to see everyone's take on the same thing. For instance, because the lasagna has cheese and tomatoes, I always think of putting something different in the salad to balance it...hence the fruit, etc. I just never used the bags of pre-done greens, so I am not sure about quantities for that. |

Thanks for all the help; used the 2 Containers of mixed greens from Costco, and it was just the right amount. Added strawberries, blueberries, thinly sliced cukes, avocado, red onion and sliced almonds. Used a light vinaigrette. It was really refreshing and nice with the lasagna. |
