Post subject:  "Whip Cream Frosting"

Hi everyone! I'm visiting with my sister in New Hampshire and she would like me to make CI Devil's Food Cake using a different type of frosting. She wants a light and airy frosting, something similar to the frosting that is often used in Strawberry Layer Cakes, no cream cheese please. We plan to make it today. I did attempt to make a "Boiled Milk Frosting" from an online site and it was a disaster. Thanks for our help!

Or, you could fold whipped cream into a swiss meringue.

For something like this I'd do about 1/2 egg white and 1/2 sugar (1/2 to 3/4 cup of each should do it). Whisk over double boiler to 140 degrees, then transfer to your stand mixer.

After you've got soft peaks, fold in any flavoring e.g., fruit puree or chocolate (melted and cooled) then fold in whipped cream. The amount would really depend on how stiff or light you want the final product.

That's what I'd do.
